
Shane just invented the Tastiest Thing. French Fries Tacos, with a side of French Fries! It’s like Mexican Primanti Bros. And it’s so freaking delicious:
French Fries Tacos
Makes 2 tacos for 2 people. Or 4 tacos for 1 people. Or 3 tacos and one for tomorrow, for one person.
What you need?
3 organic red potatoes
organic olive oil
organic raw apple cider vinegar
organic turmeric
paprika from hungary
3 cloves of minced organic garlic
organic powdered rosemary
organic sage
organic cayenne
freshly ground sea salt
freshly ground black pepper
about a cup of organic dinosaur kale (also called Black Lacinato Kale or Black Kale)
3 large organic baby bella mushrooms
1/3 jar of Trader Joes Curry Simmer Sauce
½ cup of water
Half an organic red, yellow or orange bell pepper
About 5 organic sugar plum tomatoes
Half an organic lemon
4 Non-GMO, soybean-oil-free corn tortillas
Half an organic avocado
Baking sheet

Those Taters
Preheat the oven to 375 degrees. Our oven knob is ripped off so we don’t really know what it was at. But that’s what it was supposed to be.
Cut potatoes into strips. Shane used organic red potatoes.
Put a couple tablespoons of olive oil in a baking sheet.
Take the slices and coat each side with the oil. Arrange them laying flat on the sheet.
Mix together about a tablespoon of olive oil and about a tablespoon of raw apple cider vinegar with turmeric, paprika, 3 cloves of minced garlic, powdered rosemary, sage, a bit of cayenne, freshly ground sea salt, and freshly ground black pepper.
Pour the mixture over the potato slices and make sure they’re all covered in it.
Heat the potatoes in the oven for about 20 minutes, or until they are brown, or until they are soft when you stick them with a fork.
That Sauce
Chop up dinosaur kale (also called Black Lacinato Kale or Black Kale).
Slice about 3 fatty mushrooms.
On medium high, in a baby saucepan, heat about a third of a jar of Trader Joes Curry Simmer Sauce. Add about a half a cup of water.
Add the kale and mushrooms and cook for about ten minutes or until it boils.
Cut up a half a bell pepper. Shane used orange. “You can use red. Red or yellow. Do not use green. You sons of bitches.” -Shane
Put that in the sauce.
Slice up some sugar plum tomatoes, or cherry tomatoes, and put them in the sauce. Squeeze half a lemon in that sauce.
Turn the sauce off and let it sit for about ten minutes or until the tortillas are ready.
Them Tortillas
Put a dab, maybe a teaspoon, of olive oil (or if you have grapeseed oil, use that) in a pan pan. Cook it. Until it’s hot.
Put a corn tortilla in there. Let it sit until it starts to bubble a bit, then flip it. Take it out when it starts to bubble or the edges rise. Repeat for all of the tortillas (4).
Put it together …
Slice half of an avocado into cubes and spoon it out equally on each tortilla. Surround avocado with French fry potatoes, about 6 per taco.
Spoon the sauce mix on it.
Plate it with a side of fries.
